Crunchy Salted Double Dark Chocolate Granola Cookies

Makes 12 cookies

- 1 and 1/3 cup oat flour (process rolled oats) 
- 1/4 cup cacao (or unsweetened cocoa) 
- 3/4 cup granola  
- 1/2 tsp baking soda 
- 1/2 tsp sea salt  
- 1/4 cup chopped up dark chocolate (20 g or 2 squares) 
- 1/2 cup coconut oil (softened, NOT melted) 
- 1/2 cup coconut sugar  
- 1 flax egg (1 tbsp flax meal and 2.5 tbsp water) 
- 1 tsp vanilla extract 
- 1/2 cup non-dairy milk  

Mix the dry ingredients together in a bowl: oat flour, cacao, granola, baking soda, and sea salt. Combine coconut oil and coconut sugar well. Then add vanilla extract, flax egg, and milk. Mix with dry ingredients and fold in dark chocolate.  

Scoop 2 tbsp of dough for each cookie. Bake for 12-14 minutes (I went for 14 minutes) at 350 F. Optional step: take out the baking sheet at 8 minutes and bang it against the counter 5-7 times. Don’t question it. Just do it.
