Apple Blueberry Crumble

Yields 2 small casserole dishes
INGREDIENTS:
Filling:
3 medium sized organic apples, diced
2 Tbsp. unsalted butter, melted
1/4 cup organic blueberries
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
Orange zest
In a small sauce pan/pot, add butter until melted. Add remaining ingredients (except for blueberries which I added last) and sauté until tender.
Crumble:
1 cup Yukonola Tropical Paradise granola (cut mac nuts + almonds into smaller pieces)
1-1/2 Tbsp. unsalted butter
2 Tbsp. honey
INSTRUCTIONS:
Add all ingredients to a sauce pan/pot until nicely coated. Add apple Blueberry filling to the bottom of your casserole dish and top off with crumble mixture.
Bake at 350° for 20 minutes. Serve ala mode with your favorite ice cream/gelato/sorbet.
